Avocado Pie

What do you do when you have just one avocado, and a household of 9 who each wants a taste? You make avocado pie!

Following the fiasco of my bitter avocado ice cream, I had to make sure my next avocado endeavor did not turn out the same way. I know I shouldn't cook the avocado, so this dessert is chilled.

Here's the recipe for the dessert:

Ingredients:
For the crust:
     100 g butter, melted
     2 cups crushed graham crackers

For the filling:
     1 1/2 tablespoons gelatin
     1/2 cup warm water
     2 cups cold water
1 avocado, peeled, pitted and chopped
1 small can of sweetened condensed milk

Procedure:
1. In a small saucepan over low heat, melt the butter. Once the butter has melted, add the crushed graham. The texture should be of  wet sand. Press the mixture onto a 9-inch springform pan. Chill in the freezer.
2. While the crust chills, make the filling. In a bowl, add the gelatin powder to the warm water. Stir to prevent lumps from forming.
3. In a blender, combine the avocado, cold water and condensed milk. Add the gelatin mixture and blend til smooth. Pour into the chilled crust. Cover with plastic wrap and freeze for a few hours until set.

The filling...made on a blender that's at least 10 years old. Now that's sturdy!
Ready for the freezer :)

Happy cooking!
